Step by Step Recipe with Pictures : Maqlooba An Arabian delight
I’m back with another flavourful recipe from the Arabian cuisine!!!
Its a basic rice and meat dish with vegetables sounding a lot like pulao/ biryani but with different cooking style and punch of flavors!
Before your mouth starts watering let’s just dig into the INGREDIENTS:-
- 500gms chicken
- 1cup rice
- 1 tomato +1 onion + 1 carrot + 1 capsicum + 1brinjal +1 potato all sliced in roundels
- 8-10 cloves of garlic
- 5-6 green chilies
- 2tspn of haldi, dhaniya and red chili powder each
- 1tspn each of soya sauce and red chili sauce
- 3-4 green cardamoms
- 4-5 cloves
- 2-3 bay leaves
- 1/2 inch cinnamon stick
- Oil, salt as per needed
Heat oil/ ghee. Add the whole spices
When spices are fragrant, add chicken. Cook mixing all well
Grind the garlic cloves, green chilies into a smooth paste. Add some water to it if needed.
Add the paste to the chicken. Mix and cook it well till all pieces are covered with paste. Simmer for 5mins. Add 2cups of water, cover, and cook.
When chicken is half done, remove it from the stove. Separate the chicken reserving the stock as seen in the pic below
Mix 1 tsp soya sauce, 1tspn red chillis sauce + 1/2 teaspoon of turmeric n coriander powder each and marinate the chicken.
Shallow fry all the sliced veggies and chicken in little oil individually.cook the soaked rice in the reserved stock adding salt as per need
Once rice is almost done, separate in two. In a heavy bottom pan, grease ghee and add half rice then layer the veggies and top it with chicken
Place the remaining rice on top
Cover and cook on low for 5-10 mins!
I served the delicious Arabic chicken and veg pulao with hummus and homemade pita bread!!
